No-Fail Peanut Butter & Oatmeal Balls

I'm not normally a huge snacker, but this pregnancy has me heading to the fridge in between meals like nobody's business. I'm trying so hard to stick to healthy foods while listening to my body when it's telling me I'm genuinely hungry, but sometimes I need something sweet.

I was playing Chopped: Empty Pantry Edition the other day and realized I had everything to make these Oatmeal & Peanut Butter Balls--I haven't made this recipe in a while, so I decided to change it up from past attempts (usually just peanut butter, oats, honey, and raisins). I made four different options and I am obsessed. This is a completely toddler-friendly recipe, so have your little one get some serious tactile time in a big bowl of oats, peanut butter, honey, and other treats. T loved that this was a raw recipe, too, so she could lick the spoons.


We decided to make four versions:

  • Chia Seed
  • Banana Bread-ish
  • Double Chocolate
  • Coconut
They're so #*$! good. 

All of them have the same base: 

  • 1 cup organic oats
  • 1/4 cup organic peanut butter
  • 1/2 cup organic honey



After that, they differ, so I'll share each individual recipe below--enjoy!




Chia Seed, Peanut Butter & Oatmeal Balls
Makes 10

Ingredients:
1 cup organic oats
1/4 cup organic peanut butter
1/4 cup organic honey
1 tablespoon chia seeds (you can use more, I just didn't want to overdo it)


Directions:
Combine all ingredients in a bowl and mix. Chill in fridge for 30-45 minutes. Using a spoon (we used a soup spoon), remove some of the mix and roll it into a ball. Repeat until you have no more! Store in the fridge for 4-5 days (good luck on them surviving a hungry family for that long) or for several weeks in the freezer. 


Coconut, Peanut Butter & Oatmeal Balls

Makes 10

Ingredients:
1 cup organic oats
1/4 cup organic peanut butter
1/4 cup organic honey
1/4 cup dried coconut

Directions:
Combine all ingredients in a bowl and mix. Chill in fridge for 30-45 minutes. Using a spoon (we used a soup spoon), remove some of the mix and roll it into a ball. Repeat until you have no more! Store in the fridge for 4-5 days (good luck on them surviving a hungry family for that long) or for several weeks in the freezer. 


"Banana Bread" Peanut Butter & Oatmeal Balls
Makes 10

Ingredients:
1 cup organic oats
1/4 cup organic peanut butter
1/4 cup organic honey
1 organic banana, mashed
1 tsp. cinnamon



Directions:
Combine all ingredients in a bowl and mix. Chill in fridge for 45+ minutes. This mix is VERY sticky and challenging to roll. You might even want to put it in the freezer for a while before rolling the balls. Using a spoon (we used a soup spoon), remove some of the mix and roll it into a ball. Repeat until you have no more! Store in the fridge for 4-5 days (good luck on them surviving a hungry family for that long) or for several weeks in the freezer. 



Double Chocolate Peanut Butter & Oatmeal Balls
Makes 12

Ingredients:
1 cup organic oats
1/4 cup organic peanut butter
1/4 cup organic honey
2 tablespoons cocoa powder
1/4 cup mini chocolate chips



Directions:
Combine all ingredients in a bowl and mix. Chill in fridge for 30-45 minutes. Using a spoon (we used a soup spoon), remove some of the mix and roll it into a ball. Repeat until you have no more! Store in the fridge for 4-5 days (good luck on them surviving a hungry family for that long) or for several weeks in the freezer.
